Taco Lasagne

I was twittering the other day and someone mentioned Tacos and I was like oh wow I just had taco casserole (wasn’t very good) and then I mentioned I had developed a recipe for Taco Lasagne. So here it is. We use specific brands for flavor and availability. Feel free to swap in your own but if you can get these brands you will have come very close to our favorite. The important thing here is the mole` sauce it is the star of this dish if you don’t know what mole` sauce it is a spicy chocolate sauce that is a staple of south american diets.

Ingredients

  • 2 lbs. Ground beef
  • 1 Medium Onion (white or yellow)
  • Dona Maria Mole` sauce either the paste of concentrate
  • 2 Packs of McCormicks Taco Seasoning
  • 6″ corn totrtillas (we’ve tried flour but the corn tortillas work better)
  • 16 oz bag of shredded sharp cheddar cheese
  • 1 package of Knorr taco rice

Brown the onions and hamburger according to the insdtructions on the taco seasoning packets once browned set aside.

Prepare the Mole` sauce according to package directions prepare in a large pot as you will need all of the mole` sauce. Set aside.

Prepare the taco rice according to the package directions. Once ready, set aside.

Once all is prepared begin to assemble the lasagne starting with 8 corn tortillas laid out in the bottom of a large casserole dish spread 1/3 of the meat 1/3 of the rice and 1/3 of the chees spoon mole` sauce over all.

Repeat steps for the next 2 layers until meat and rice are used up top with one last layer of tortillas, the remaining cheese and mole` sauce.

Bake in an 350 oven for 40 minutes, let stand for 10, then serve.

Top your serving with salsa, sour cream, or black olives or nothing at all and enjoy!
